This report accounts for chemical analysis of beer. The methods which have been used for the analysis are UV/Vis spectrophotometry and GC-MS. For extraction and injection of the analytes in the GC-MS, three differrent methods were used. These were HS-SPME, IM-SPME and direct injection. The purpose of the analyses was to evaluate how useful different methods are for breweries. The utility of the methods were evaluated in both the aspect of what type of information was obtained as well as the aspect of cost. The financial aspect allows certain methods to be more suitable for some breweries but not for others. For breweries that have greater financial opportunities investments in expensive equipment can be profitable. Similar investments may be impossible for smaller breweries. The laboratory work was supplemented with literature studies as well as interviews with representatives from the brewing industry. The results from the experiments showed that HS-SPME with an extraction time of 15 minutes was the most effective method for beer analysis. This conclusion could be drawn since VOCs, which are most relevant for beer analysis, were best demonstrated with HS-SPME. An extraction time longer than 15 minutes did not provide any further valuable data. The conclusion was also drawn that the UV/Vis spectrophotometer can be valuable equipment to invest in if knowledge about specific measurements is possessed. It is not sustainable for smaller breweries to pay for the development of a method for analysis. Therefore a market exists for consultants, e.g BeerLab, that can perform analyses of beers for the smaller breweries.
